<title>Big Gray Wolf, Shenzhen, China</title>

<a href="http://photos.i.xihalife.com/u/0/0/48/uploads/large/624321426450585b64bb03.jpg" target="_blank"><img width="288" border="0" src="http://photos.i.xihalife.com/u/0/0/48/uploads/medium/624321426450585b64bb03.jpg" alt=""></a>  The best restaurant I've been to in Shenzhen and one of the best anywhere in the world is Big Gray Wolf in the city center. As the name suggests the menu consists of a variety of lamb meat, but the restaurant also features a selection of yummy vegetable dishes. The food is slightly spicy and the offering is Chinese style, where you order a number of dishes to the table for everyone to share.<br><br>I've been a regular customer for almost a year now, visiting once or twice a month and the quality of the food is consistently high. The service is always friendly and professional, even if a little slow at times. However, I would suggest avoiding Gray Wolf on holidays, as they tend to offer only a pre-set menu for a fairly high price and the food seems no as good as usual.<br><br>My most memorable moment at Big Gray Wolf was last November, at my birthday. We wanted to order a birthday cake... but they don't have any cakes in the menu. Always friendly and willing to help, they ordered a real birthday cake from a nearby bakery and when it was brought to the table the restaurant also presented me with a birthday present! The actual present was a coffee cup from their interesting selection (you won't find two similar cups in the restaurant... they're all different).<br><br><a href="http://photos.i.xihalife.com/u/0/0/48/uploads/large/7055256184505857a1fbe2.jpg" target="_blank"><img width="384" border="0" src="http://photos.i.xihalife.com/u/0/0/48/uploads/medium/7055256184505857a1fbe2.jpg" alt=""></a>  <a href="http://photos.i.xihalife.com/u/0/0/48/uploads/large/183904318345058595afc92.jpg" target="_blank"><img width="384" border="0" src="http://photos.i.xihalife.com/u/0/0/48/uploads/medium/183904318345058595afc92.jpg" alt=""></a> <br>The interior design is very cool and original. The restaurant building is titled "Wolf's nest" and the interior is decorated accordingly. The roots for this are in the second world war era when Japanese were operating restaurants in China where Chinese were banned. <title>Baked shrimp in a shell by Jani</title>

This is basically the way Chinese often like to eat Shrimp. Since the Chinese kitchen usually doesn't have oven the way they cook it might be a little different but the idea is the same anyway.<br><br><a href="http://hu.xihalife.com/p/10919/"><img width="256" border="0" src="http://photos.i.xihalife.com/u/0/0/48/uploads/medium/63164658446c223b5a12f0.jpg" alt=""></a>  Basically, I like shrimp but I don't fancy the messy deshelling part. Purchasing readily peeled shrimp is out of the question too, as my wife believes shrimp has to be cooked in shell in order to get the best taste out of it. And she is right, of course. But how about if you could cook the shrimps in the shell and then eat the whole package? That way you wouldn't need to worry about the peeling... sounds perfect, right? Well there is a way, and I must admit until my first visit to China I had never even thought of it.<br><br><a href="http://hu.xihalife.com/p/10921/"><img width="384" border="0" src="http://photos.i.xihalife.com/u/0/0/48/uploads/medium/195035999546c223d27bea5.jpg" alt=""></a>  <img width="44" height="35" border="0" alt="smiley" src="http://static.i.xihalife.com/images/smileys/sm01/35h/12.gif"/> The idea is very simple. You bake the shrimps in the oven until the shell is dried. At that point it just crunches in your mouth. Quite surprisingly it's very good tasting, a yummy snack! <br>Here's how to do it. First, turn on the oven (250 degrees Celsius / 480 Fahrenheit). The preparation is quick so you'll be done by the time the oven is ready. Wash the shrimps under cold water and dry it over a towel. Then butter or oil the shrimps and place them on an oven rack. I used butter this time but I am guessing oil would get you a result with better color. And then... you're done!<br><br><a href="http://hu.xihalife.com/p/10925/"><img width="256" border="0" src="http://photos.i.xihalife.com/u/0/0/48/uploads/medium/30692954546c2258d92526.jpg" alt=""></a>  Once all the shrimps are lined up to the rack, the oven is likely just about ready and you can move the rack in. It'll only take 15 minutes so watch that timer. You don't want to cook these guys too long time as the shell is very thin and will burn easily. When the time is up, remove the rack from the oven, collect the shrimps and serve immediatelly!<br><br>This is the kind of dish like french fries - it takes by far the best right out of the oven. You can add some salt, and then just get eating! Snap off the head, and then eat the rest of the body, including the shell, legs and the tail! Don't be shy - it's delicious!<br><br>Oh, and I should add that This dish is an excellent source of calcium, too. <img width="38" height="35" border="0" alt="smiley" src="http://static.i.xihalife.com/images/smileys/sm02/35h/18.gif"/><br><br>This will probably be best considered a side dish as it doesn't quite make you full. I ate all of the shrimps you can see in the photos and didn't really feel stuffed. <title>chocolate cherry triple....marvellous umm!!</title>
<description><![CDATA[
Cook Time:15 min<br>Level:Intermediate<br>Yield:16 servings<br><br>Ingredients<br>2 (approximately 12 ounces each) chocolate pound cakes <br>1/2 cup black cherry jam <br>1/2 cup cherry brandy <br>2 cups drained bottled sour cherries (recommended: Morello) <br>Custard:<br>4 ounces bittersweet chocolate, minimum 70 percent cocoa solids, chopped <br>1 1/3 cups plus 1 tablespoon milk <br>1 1/3 cups plus 1 tablespoon heavy cream <br>8 egg yolks <br>1/2 cup plus 1 tablespoon sugar <br>1/3 cup cocoa <br>Topping:<br>3 cups heavy cream <br>1-ounce bittersweet chocolate <br>Special Equipment: Large wide trifle bowl <br>Directions<br>Slice the chocolate pound cake and make jam sandwiches with the cherry jam, and layer the bottom of a large wide trifle bowl. Pour over the cherry brandy so that the cake soaks it up, and then top with the drained cherries. Cover with cling wrap and leave to macerate while you make the custard. <br><br>Melt the chocolate on low to medium heat in the microwave, checking after 2 minutes, though it will probably need 4 minutes. Or you can place it in a bowl over a pan of simmering water. Once the chocolate is melted, ser aside while you get on with the custard. <br><br>In a saucepan warm the milk and cream. Whisk the egg yolks, sugar, and cocoa in a large bowl. Pour the warm milk and cream into the bowl whisking it into the yolks and sugar mixture. Stir in the melted chocolate, scraping the sides well with a rubber spatula to get all of it in, and pour the custard back into the rinsed saucepan. Cook over a medium heat until the custard thickens, stirring all the time. Make sure it doesn't boil, as it will split and curdle. Keep a sink full of cold water so that if you get scared you can plunge the bottom of the custard pan into the cold water and <br><br>whisk like mad, which will avert possible crisis. <br><br>The custard will get darker as it cooks and the flecks of chocolate will melt once the custard has thickened. And you do need this thick, so don't panic so much that you stop cooking while it is still runny. Admittedly, it continues to thicken as it cools and also when it's chilling in the refrigerator. Once it is ready, pour into a bowl to cool and cover the top of the custard with cling wrap to prevent a skin from forming. <br><br>When the custard is cold, pour and spread it over the chocolate cake layer in the trifle bowl, and leave in the refrigerator to set, covered in cling wrap overnight. <br><br>When you are ready to decorate, softly whip the cream for the topping and spread it gently over the layer of custard. <title>Vanilla Gelato Bites with Chocolate and Hazelnuts!!!ummm!!!</title>

Ingredients<br>1 pint vanilla gelato or ice cream <br>1 (12-ounce) bag chocolate chips (about 2 cups) <br>1 cup finely chopped toasted hazelnuts (about 5 ounces) <br>Directions<br>Special equipment: bite-sized ice cream scoop and wooden popsticks <br><br>Place a small tray or a plate in the freezer. Remove the gelato from the freezer to soften, about 5 minutes. Remove the chilled tray from the freezer. Scoop out 16 bite-sized balls of gelato and place in the freezer for at least 1 hour. Remove from the freezer and quickly insert a wooden popstick into each gelato ball. Return them to the freezer for at least 1 hour. <br><br>When the gelato balls have frozen with their sticks in place, place the chocolate in a double-boiler over very gently simmering water until melted. Next to the pot of chocolate, place the toasted, chopped hazelnuts in a shallow bowl. <br><br>Remove the gelato balls from the freezer, 4 at a time. Working quickly, hold the gelato ball by the stick and dip into the melted chocolate, then dredge it in the hazelnuts. Return them to the freezer and continue with 4 more gelato balls, until all the gelato balls are covered in chocolate and nuts. Freeze the chocolate-and-nut-covered gelato for at least 1 hour. <br><br>These are very fun, festive, and tasty. <img width="300" border="0" src="http://photos.i.xihalife.com/u/0/33/33801/uploads/532/30794931047dd1c1371fcd.jpg" alt="">  <br>Crust: <br>6 tablespoons unsalted butter, melted <br>1 1/2 cups crushed graham cracker crumbs <br>2 tablespoons sugar <br>Pinch fine salt <br>Brownie: <br>8 tablespoons (1 stick) unsalted butter <br>4 ounces unsweetened chocolate, chopped <br>1 cup packed light brown sugar <br>3/4 cup white sugar <br>1 1/2 teaspoons pure vanilla extract <br>1/2 teaspoon fine salt <br>4 large cold eggs <br>1 cup all-purpose flour <br><br>Topping: <br>4 cups large marshmallows<br><br><br>Position a rack in the lower third of the oven and heat oven to 325 degrees F. Line an 8 by-8-inch square baking pan with foil so it hangs over the edges by about 1 inch. <br>For the crust: Lightly butter the foil with some of the melted butter. Stir the rest of the butter together with the crumbs, sugar, and salt in a medium bowl. Press the crumb mixture evenly over the bottom of the pan. Bake until golden brown, about 20 minutes. <br><br>Meanwhile, make the brownie. Put the butter and chocolate in a medium microwave safe bowl. Melt in the microwave on 75 percent power for 2 minutes. Stir, and microwave again until completely melted, about 2 minutes more. Alternatively, put the butter and chocolate in a heatproof bowl. Bring a saucepan filled with 1 inch or so of water to a very slow simmer; set the bowl on the pan without touching the water. Stir occasionally until melted. Stir the light brown and white sugars, vanilla and salt into the melted chocolate. Add the eggs and beat vigorously to make a thick and glossy batter. Add the flour and stir until just incorporated. <br><br>Pour batter into the prepared pan. Bake until the top is crispy and a toothpick inserted into the middle comes out mostly clean, with a few crumbs, about 40 to 45 minutes. <br><br>Remove from the oven and carefully position a rack about 6 inches from the broiler and preheat on low. Layer marshmallows across the top and toast under the broiler until golden, (keep an eye on it, it can go quick), about 2 minutes. Cool on a rack, gently removing the brownies from the pan using the aluminum flaps. Carefully separate any marshmallow from the foil and fold away. this will sound really strange, but it works and is SO good. like chocolate cheesecake if you do it right. make a package of instant hot chocolate in a bowl. mix in 1/2 cup of sour cream. mix REALLY well, then chill. when reletivly stiff, add pwdered sugar and cinimmon to taste. It requires some amount of work but you can do it in parts to make the job a little easier. First you need to make the actual white cake. There are different types of cakes you can make so I'm not going into details of how to make it now (might post something about it later!) Depending on where you live, you might just be able to walk into a supermarket and buy an angel food cake or some other plain white (sweet) cake so you can even skip the first step.<br><br>After you have the cake, you will need to cut it in thin layers. Something like 2 cm think will be fine. Generally, thinner is better but also much harder. To make a perfect cut you need a long and very sharp knife - the kind that chefs have - and with that type of knife it is as easy to cut yourself as the cake.<br><a href="http://photos.i.xihalife.com/u/0/0/48/uploads/large/2705023944f305fb35b70.jpg" target="_blank"><img width="384" border="0" src="http://photos.i.xihalife.com/u/0/0/48/uploads/medium/2705023944f305fb35b70.jpg" alt=""></a>  The filling is what makes the cake taste so good! You'll typically have three types of ingredients for filling - whipped cream, fruit and berries. Soft sweet tastes, such as bananas, strawberries, blueberries and rasberries work really well.<br><a href="http://photos.i.xihalife.com/u/0/0/48/uploads/large/214227607144f30618de2cd.jpg" target="_blank"><img width="384" border="0" src="http://photos.i.xihalife.com/u/0/0/48/uploads/medium/214227607144f30618de2cd.jpg" alt=""></a>  It's better to have the fillings prepared in advance and stored in fridge so you can just pull them out after you've cut the cake. Use the juice from the berries and/or fruit to moisten each layer. This is very important to remember, to get the perfect taste! Add berries/fruits on each layer. If you have different types you can dedicate one layer for each type or mix and match. It's better to buy whipping cream and mix it yourself - stay away from the ready made whipped creams when you make a cake! The ready made stuff will lose its consistency quickly so it's not suitable for this type of purpose. Decorate the cake to your tastes. You can use a knife to polish the cake if you want more solid surface. You can use fresh berries to top the cake, as well as chocolade, candy or caramel.
